Easy Homemade Nachos Recipe

Hope you're all doing well..
So today the sun has been shining and it feels freaking fabulous. Today has been the first day of the year so far where I've been able to wear my sunglasses with actual sun.
I fancied something really tasty an summery for my lunch, and as its my day off I figured that it could also be slightly naughty. I decided on nachos! They are so delicious and taste so summery and fresh.
I thought i'd share my recipe with you so here we go.

You will need:


  • 3 tortilla wraps
  • 2 red onions
  • 100g cheese, grated
  • 1 ripe avocado
  • 10 cherry tomatoes
  • 1 lime
  • 1 pepper (I use green)
  • 1 tsp of paprika
  • olive oil spray
  • salt & pepper
1. Preheat your oven to 200 degrees.

2. Get two large baking trays lined with grease proof paper. Slice your tortilla wraps into small triangles. Spray both sides of the cut up tortillas with the olive oil spray and then sprinkle over the salt and pepper. Pop those in the oven for 8-10 minutes, turning trays in between to make sure they all crisp.

3. While the crisps are baking, make the salsa and guacamole. To make the guacamole, cut open the avocado and scoop out the middle into a bowl. Chop up one of the onions into fine chunks and add to the dish. Also, cut the lime in half and squeeze one of the halves into the dish. I use a fork to mash these together as I prefer chunky guacamole. If you prefer smoother I would pop it in a blender.
For the salsa, chop up the tomatoes into halves and dice up the pepper. Add the other onion chopped into fine chunks and then add the paprika. Give this a quick whizz in the blender. Pop both of the dips aside for a moment.

4. Take the browned tortilla chips out of the oven and arrange onto a plate. Add the grated cheese over. Put back in the oven until the cheese is starting to bubble. Be careful taking out of the oven as the plate will be super hot.

5. Add the guacamole and salsa onto your chips if you like it messy, or pop them into separate dishes for dipping.

6. Add any other toppings you like. I like to add sour cream or sometimes freshly chopped spring onion.
